Current food safety standards (e.g. IFS/BRC) stipulate that the compressed air used may not represent any risk to food safety. Microbiological contaminants could, for example, negatively affect food safety. The consequence of this requirement is that the quality of the compressed air has to be examined, controlled and monitored as part of a risk analysis procedure. This is particularly important when the compressed air comes into direct contact with the food product or with plant components and primary packaging which themselves come into contact with the product.
